
Summer Fruit Spring Rolls with Honey Yogurt Sauce
Ingredients
For the fruit spring rolls:
Note: You can use any fruit you like! These are a few of my favorites.
●1/2 cup strawberries, sliced in quarters
●1 kiwi, cut into slices (remove skin)
●1/2 mango, remove skin and cut into stripes
●1 peach, cut into stripes
●1/4 cup blueberries
●1/4 cup raspberries
●4 sheets of Vietnamese rice paper (you can find this in the Asian section of
the grocery store)
●fresh mint leaves (optional)

Honey Yogurt Dipping Sauce
●1 cup yogurt any kind (I prefer Vanilla)
●2 TBSP Honey
All about me:
Tessa Collins is an Executive Chef at Aramark working for Crowley ISD. She is able
to work with students on several projects including; the growing chef (a student
and parent cooking class she created and the lone star chef an annual junior chef
competition where students compete for scholarship money.)
Tessa graduated from American River College in Sacramento, Ca and began
working for several restaurants around the Sacramento area and doing cooking
segments on Good day Sacramento. She has worked in Hawaii and often uses
the Polynesian influence in her cuisine.
Tessa enjoys traveling, soaking in as much knowledge about food as she can and
sharing it with her friends and family.
